What John Gilchrist Orders at Empire Provisions

There are sandwiches and then there are the sandwiches at Empire Provisions. The Cubano consists of citrus-roasted pork shoulder and Tuscan ham layered with cheddar, pickles and mustard in a fresh ciabatta bun. It shares the menu with other winners like the beef-and-pork meatloaf crusted in a spicy brown sugar glaze oozing with pickled onions and sausage gravy. That one’s a multi-napkin effort. Empire is all about meat: cured, roasted, corned, or pressed fresh and thick into sausage casings. Much of it ends up in sandwiches that range from porchetta to Burmese sausage on brioche. Any one of them is a winner. Add a soup or salad if you like, but it’s the humble sandwich that takes the cake here.
