Due to the smaller nature of our shop, we are only able to process game and trim for fresh sausage and prepared items listed below.  We unfortunately do not have the space or capacity to hang animals for aging purposes for steaks and roasts.

PREPARED PRODUCTS

Our smoked sausage comes with 30% added naturally raised pork from Bear and the Flower Farm. Rings or links are available on certain items. Minimum orders of 7 kg for Prepared items below.

ANDOUILLE (SMOKED) $12/kg

JERKY (DEHYDRATED) $20/kg (pre-cooked weight)

maple mustard, Filipino or Singapore style.

DRY CURED SALAMI $20/kg (pre-dried weight)

saucisson sec, finocchiona, cacciatore, Spanish chorizo,

landjager.

HOT DOGS (SMOKED) $12/kg

paprika, garlic, coriander, mustard

BRATWURST (STEAMED) $10/kg

white pepper, ginger, garlic, milk.

PEPPERONI (SMOKED) $10/kg

paprika, allspice, cayenne

HARVEST SAUSAGE (SMOKED) $13/kg

caramelized apples & onion, sage, thyme,

nutmeg


FRESH SAUSAGE

Our fresh sausage comes with 30% added naturally raised pork from Bear and the Flower Farms. Sausages will be packaged in packs of 4, in labelled, vacuum sealed bags. Minimum orders of 7 kg for items below. All fresh sausage can be smoked. Please add $3 to each price per kg.
